Go to: Edit -> Preferences -> tab 'Media' -> uncheck 'Browse media when inserted'
Note: in this screen you can also configure actions to perform for different media types that are inserted.

Go to: apps -> nautilus -> preferences -> uncheck 'media_automount_open'
